Shrimp Cocktail Pizza
1 Batch homemade cocktail sauce (recipe to follow)
1/2 tsp lemon zest
9-12 cooked shrimp, tails removed
1 thin pizza crust (a grande tortilla works well!)
Cilantro to taste
2-3 cups shredded mozzarella cheese.
Homemade cocktail sauce:
3 tblsp horseradish
1/2 cup ketchup
4 drops hot sauce
Preheat oven to 500 degrees.
Spread cocktail sauce on crust, fairly thinly. Use it all. Arrainge shrimp evenly spaced inside the sauce. Sprinkle lemon zest across the sauce, again, evenly spaced. Top with cheese and top cheese with cilantro.
Place in very hot oven and cook until the cheese starts to turn just a little tan.
